In nutritional science, fatty acids are generally classified into saturated, monounsaturated, and polyunsaturated fatty acids. Additionally, there are trans fatty acids, which are predominantly formed during industrial processing or occur naturally in small amounts in certain foods. A high intake of industrial trans fatty acids is considered nutritionally unfavorable.
Monounsaturated fatty acids are primarily found in olive oil and avocados and are an important component of a balanced diet. Polyunsaturated fatty acids – especially the essential omega-3 and omega-6 fatty acids – cannot be produced by the body itself. They must therefore be obtained through diet and perform important functions in the body. Due to their chemical structure, they are more sensitive to light, oxygen, and heat and should therefore be stored and processed as gently as possible.
Saturated fatty acids are chemically more stable and therefore often solid at room temperature, such as butter or coconut oil. Due to their higher heat stability, certain fats are better suited for frying than delicate, polyunsaturated oils.
