According to classical chemical nomenclature, we would distinguish between the following categories: unsaturated fats, monounsaturated fats, polyunsaturated fats, and trans fats. We clearly focus on animal fats, as plant fats like ALA from algae are only processed by 15% in the food chain and then, of course, also become fatty acids in salmon. At the equator, saturated fatty acids are found in coconut. Butter is also a healthy food that is solid at room temperature because it contains no unsaturated fatty acids. Monounsaturated fatty acids are found in olives. One also distinguishes between short-, medium- and long-chain fatty acids. Medium-Chain-Triglycerides (MCT) are compounds 15-18 carbon atoms long. If we take Omega-3, then in a 20-carbon atom long chain, there is an unsaturated double bond at the third position, i.e., 6 in total. The oil becomes more liquid and fluid due to the curvature. Omega-3 is an example of a primeval forest & in this primeval forest stand different trees, such as DHA, EPA, and DPA. Half of our dry brain weight consists of DHA. In terms of effect, you can remember that E in EPA stands for anti-inflammatory, even reversing inflammation, not just stopping it like curcumin. DHA, as already mentioned, is important for brain supply. DPA is recognized by the fact that it occurs in salmon, not in cod or haddock.
